Ingredients:
- 2 cups wholemeal flour
- 5 tsp Salt-Skip baking powder
- 1 tsp ground coriander
- ½ cup dried diced apricots
- ½ cup chopped dates
- ½ cup chopped walnuts
- 1 ¼ cup soy milk
- 1 tsp vanilla extract
- 2 eggs
- 1 cup mashed very ripe banana (about 2 large bananas)
- ½ cup honey
Method:
- Preheat oven to 180°C.
- Line the base of a loaf pan (22cm x 10cm) with non-stick baking paper and oil the sides.
- Sift flour, baking powder and coriander into a large bowl.
- Stir in dried apricots, dates and walnuts.
- Place soy milk, vanilla extract, eggs, banana and honey in blender and blend until smooth.
- Pour blended mixture into dry mixture and mix until well combined.
- Spoon mixture into prepared loaf pan.
- Bake for 50-55 minutes or until a skewer inserted in the centre comes out clean.
- Cool in pan for 10 minutes, then turn onto a wire rack to cool completely.
- Slice and serve, warm or cold.
