Method:

  1. Preheat oven to 180°C.
  2. Line the base of a loaf pan (22cm x 10cm) with non-stick baking paper and oil the sides.
  3. Sift flour, baking powder and coriander into a large bowl.
  4. Stir in dried apricots, dates and walnuts.
  5. Place soy milk, vanilla extract, eggs, banana and honey in blender and blend until smooth.
  6. Pour blended mixture into dry mixture and mix until well combined.
  7. Spoon mixture into prepared loaf pan.
  8. Bake for 50-55 minutes or until a skewer inserted in the centre comes out clean.
  9. Cool in pan for 10 minutes, then turn onto a wire rack to cool completely.
  10. Slice and serve, warm or cold.
