Ingredients:
- 1 block tofu (250-300g)
- ¼ c honey
- 1 t vanilla
- ¼ c coconut
- 2 T lemon juice
- pinch salt
- ½ c cashew nuts
- 1 c pineapple
Method:
- Place all ingredients, except cashew nuts and pineapple, in a blender or food processor.
- Whiz until smooth.
- Add nuts and pineapple and pulse until desired texture.
- Use as a spread on bread or crackers.
