Almond & Tomato Balls

- 1 onion, finely chopped
- 1 clove garlic, minced
- 2 T olive oil
- 2 large tomatoes, skinned & chopped
- ¾ c almonds, crushed
- 2 c wholemeal breadcrumbs
- Seasonings & herbs
Method:
- Saute onion & garlic in oil or water.
- Add tomatoes and cook for 5 minutes.
- Pour into a bowl and add rest of ingredients.
- Form into small balls.
- Bake in medium (180°c) oven until warmed through.
- Serve with tomato sauce.
