Method:

  1. Heat oil and cook onion over medium heat for 2-3 mins or until soft.
  2. Add garlic, cumin and ground coriander.
  3. Cook for 1 minute.
  4. Add chickpeas, water, stock powder, tomato juice and tomatoes.
  5. Bring to boil, then reduce heat and simmer until warmed through.
  6. Stir in fresh coriander.
