Chick Pea Soup

Ingreadients:
- 1 T oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 2 t ground cumin
- 2 t ground coriander
- 3 c cooked chick peas
- 3 c hot water
- 3 t stock powder
- 1 c tomato juice
- 1 large can chopped tomatoes
- 1 T chopped fresh coriander leaves
Method:
- Heat oil and cook onion over medium heat for 2-3 mins or until soft.
- Add garlic, cumin and ground coriander.
- Cook for 1 minute.
- Add chickpeas, water, stock powder, tomato juice and tomatoes.
- Bring to boil, then reduce heat and simmer until warmed through.
- Stir in fresh coriander.
