Seasoned Beans

- ¼ c bulgar wheat
- ½ c hot water
- 1 onion, chopped
- 1 clove garlic, minced
- 1½ c tomato paste
- 1 can (400g) tomatoes in juice
- ½ t oregano
- ¼ t celery seed
- 1 green capsicum, chopped
- 1 t salt
- ½ t cumin
- 3 c cooked kidney or pinto beans
- 1 T fresh parsley
Method:
- Place bulgar wheat in hot water and set aside for 10-20 mins.
- Sauté onion, garlic and capsicum in olive oil.
- Add rest of ingredients and simmer until bulgar wheat is soft.
