Ingredients:
- 1½ c red lentils
- 2 onions, chopped
- 2 tomatoes, chopped
- 2 T soy sauce
- 3 bay leaves
- 3¼ c water
- 2 garlic cloves, minced
- 1 c walnuts, ground
- 1 c parsley, chopped
Method:
- Simmer first 6 ingredients until almost tender.
- Add salt to taste, garlic, walnuts and parsley.
- Place in casserole dish and pour pie topping over the top – see below.
Pie topping
Ingredients:
- 1 c water
- ¼ c sunflower seeds
- 1 c oats
Dash lemon juice
- 1 T peanuts
- ¼ c cashews
- ½ t veggie salt
- 1 t onion powder
- 1 c soya milk
Method:
- Blend above ingredients and pour over lentils.
- Bake till brown at 180ºC – about ½ hour.
