Ingredients:
- 1 ½ c black glutonous rice
- 1 clove garlic, crushed
- 4 c water
- 1 T olive oil
- 2-3 t stock powder
- Fresh tomatoes, sliced
- 1 red capsicum,
- chopped
Baby spinach leaves
- 1 onion, chopped finely
Method:
- Bring water to a boil in pan and add stock powder and rice.
- Simmer for 45-60 minutes.
- Meanwhile, heat oil and add onion and garlic – cook till soft.
- Then stir into cooked rice.
- Allow to cool.
- Line a loaf tin with Glad-Wrap.
- Layer sliced tomatoes on bottom, then spinach leaves.
- Spoon half the rice mixture on top.
- Then repeat with the rest of the tomatoes, spinach and rice.
- Cover with Glad-Wrap, place weight on top to compress and place in fridge for at least 3 hours before serving.
