Salad Ingredients:
- 4 cups fresh spinach
- 1 cup cooked peas
- ½ small red onion, chopped
- 4 medium tomatoes, cut in wedges
- (or radishes or red-capsicum)
- 1 cup capsicum, chopped
- ½ cup macadamia nuts
Dressing Ingredients:
- 3 Tbsp olive oil
- 1 Tbsp lemon juice
- 1 clove garlic, crushed
- Pinch onion powder
- Pinch salt
Method:
- Place all salad ingredients in bowl.
- Place all dressing ingredients in jar and shake to mix.
- Drizzle dressing over salad and lightly toss.
