Vegetable & Pearl Barley Soup

Method:

  1. Heat oil in large saucepan and sauté onion until soft.
  2. Add rest of ingredients.
  3. Bring mixture to the boil, then reduce heat and simmer for 30-35 minutes or until barley is soft.

1 Tbsp olive oil

1 medium onion, chopped

2 ½ tsp paprika

Pinch cayenne pepper

2 carrots, chopped

2 potatoes, chopped

2 sticks celery, sliced

6 cups liquid vegetable stock

2 cups water

400g can chopped tomatoes

400g can kidney beans, drained and rinsed

1 cup pearl barley, rinsed

2 Tbsp tomato paste (no added salt)

2 Tbsp yeast flakes

Fresh or dried herbs for flavouring
