Vegetable & Pearl Barley Soup

- 1 Tbsp olive oil
- 1 medium onion, chopped
- 2½ tsp paprika
- Pinch cayenne pepper
- 2 carrots, chopped
- 2 potatoes, chopped
- 2 sticks celery, sliced
- 6 cups liquid vegetable stock
- 2 cups water
- 400g can chopped tomatoes
- 400g can kidney beans, drained and rinsed
- 1 cup pearl barley, rinsed
- 2 Tbsp tomato paste (no added salt)
- 2 Tbsp yeast flakes
- Fresh or dried herbs for flavouring
Method:
- Heat oil in large saucepan and sauté onion until soft.
- Add rest of ingredients.
- Bring mixture to the boil, then reduce heat and simmer for 30-35 minutes or until barley is soft.
